Banana & Peanut Butter Chia Seed Pudding

  1. Step 1: In a blender, combine the ripe banana, peanut butter, almond milk, maple syrup, vanilla extract, and a pinch of salt. Blend everything until the mixture is completely smooth and creamy; this will be the flavor base of your chia pudding. If your banana isn’t fully ripe, you may want to add a touch more maple syrup for sweetness.
  2. Step 2: Pour the blended mixture into a bowl or glass jar and stir in the chia seeds using a spoon or whisk until they are evenly distributed. Let the mixture sit for 5 minutes, then stir again to prevent the seeds from clumping and settling at the bottom.
  3. Step 3: Cover the jar or bowl and place it in the refrigerator to set for at least 2 hours, or preferably overnight. During this time, the chia seeds will absorb the liquid and form a thick, pudding-like texture that’s creamy and spoonable.
  4. Step 4: When ready to serve, give the pudding a final stir to ensure an even texture. Spoon into serving jars or bowls and top with banana slices, a drizzle of peanut butter, and an extra sprinkle of chia seeds. You can also add cacao nibs, granola, or a touch of cinnamon if desired.
