Molasses Spice Cookies
Introduction
Molasses Spice Cookies are a warm and cozy treat, perfect for autumn and winter. Packed with rich molasses flavor and aromatic spices, these cookies have a soft, chewy texture and a delightful crackled top. They’re the perfect companion to a cup of tea, coffee, or even a glass of milk.
Ingredients
- 2 ¼ cups all-purpose flour
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp ground cloves
- ¼ tsp salt
- ¾ cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- ¼ cup molasses
- 2 tsp baking soda dissolved in 1 tbsp hot water
- ¼ cup granulated sugar (for rolling)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Mix dry ingredients: In a bowl, whisk together flour, ginger, cinnamon, cloves, and salt.
- Cream butter and sugar: In a large bowl, beat butter and brown sugar until light and fluffy. Add egg and beat until well combined. Stir in molasses.
- Add soda mixture: Mix baking soda dissolved in hot water into the wet ingredients. Gradually add the dry ingredients and stir until combined.
- Shape cookies: Roll dough into 1-inch balls, coat in granulated sugar, and place on prepared baking sheets.
- Bake for 8–10 minutes or until cookies are puffed and crackled on top. Do not overbake for a soft texture.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
