Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 Tbsp olive oil
  • 1 medium onion, diced
  • 3 bell peppers (red, green, or yellow), chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) diced tomatoes
  • 4 cups beef broth (or chicken broth)
  • 1 cup cooked rice (white or brown)
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Brown the Beef – In a large pot or Dutch oven, heat olive oil over medium heat. Add ground beef, season with salt and pepper, and cook until browned. Drain excess fat if needed.
  2. Add Vegetables – Stir in onion, bell peppers, and garlic. Sauté for 4–5 minutes until softened and fragrant.
  3. Build the Soup Base – Add tomato sauce, diced tomatoes, beef broth, Italian seasoning, and paprika. Stir well and bring to a gentle boil.
  4. Simmer – Reduce heat to low, cover, and simmer for 25–30 minutes to allow the flavors to meld.
  5. Add Rice – Stir in the cooked rice and let simmer another 5 minutes. Adjust seasoning with more salt and pepper if needed.
  6. Serve & Enjoy – Ladle into bowls, garnish with fresh parsley, and serve warm with crusty bread.
