  • 2 ¼ cups all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground cloves
  • ¼ tsp salt
  • ¾ cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • ¼ cup molasses
  • 2 tsp baking soda dissolved in 1 tbsp hot water
  • ¼ cup granulated sugar (for rolling)

  2. Mix dry ingredients: In a bowl, whisk together flour, ginger, cinnamon, cloves, and salt.
  3. Cream butter and sugar: In a large bowl, beat butter and brown sugar until light and fluffy. Add egg and beat until well combined. Stir in molasses.

  5. Shape cookies: Roll dough into 1-inch balls, coat in granulated sugar, and place on prepared baking sheets.
