Ingredients:

  • 1 cup (150g) chopped pitted dates
  • 1/2 cup (120ml) boiling water
  • 1/2 tsp baking soda
  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) brown sugar
  • 1/4 cup (50g) white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups (160g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Optional: 1/2 tsp ground cinnamon or nutmeg for extra flavor

Instructions:

  1. Prep the Dates:
Place chopped dates in a bowl, pour over boiling water, and stir in baking soda. Let it sit for 10 minutes to soften.
  2. Make the Dough Base:
In a large bowl, cream together butter, brown sugar, and white sugar until light and fluffy.
  3. Add Wet Ingredients:
Mix in the egg and vanilla extract until well combined.
  4. Add the Date Mixture:
Stir in the softened dates (with liquid) into the wet mixture.
  5. Combine Dry Ingredients:
In another bowl, whisk together flour, baking powder, salt, and cinnamon (if using). Gradually add to the wet mixture, mixing just until combined.
  6. Chill the Dough (Optional but Recommended):
Chill dough in the refrigerator for 20–30 minutes for thicker cookies.
  7. Bake:
Preheat oven to 350°F (175°C). Scoop tablespoon-sized balls onto a baking sheet lined with parchment paper. Bake for 10–12 minutes, or until edges are golden but centers are still soft.
  8. Cool & Enjoy:
Let cookies cool on the tray for 5 minutes before transferring to a wire rack. Enjoy warm or store in an airtight container for up to 5 days!

Tip:

You can add chopped nuts like walnuts or pecans for extra crunch!
