These Soft & Chewy Date Cookies are the perfect blend of natural sweetness and comforting flavor. Packed with chopped dates, warm spices, and a hint of vanilla, these cookies are ideal for snacking or sharing with friends. Best of all? They’re super easy to make!
Ingredients:
- 1 cup (150g) chopped pitted dates
- 1/2 cup (120ml) boiling water
- 1/2 tsp baking soda
- 1/2 cup (113g) unsalted butter, softened
- 1/2 cup (100g) brown sugar
- 1/4 cup (50g) white sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/4 cups (160g) all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- Optional: 1/2 tsp ground cinnamon or nutmeg for extra flavor
Instructions:
- Prep the Dates:
Place chopped dates in a bowl, pour over boiling water, and stir in baking soda. Let it sit for 10 minutes to soften. - Make the Dough Base:
In a large bowl, cream together butter, brown sugar, and white sugar until light and fluffy. - Add Wet Ingredients:
Mix in the egg and vanilla extract until well combined. - Add the Date Mixture:
Stir in the softened dates (with liquid) into the wet mixture. - Combine Dry Ingredients:
In another bowl, whisk together flour, baking powder, salt, and cinnamon (if using). Gradually add to the wet mixture, mixing just until combined. - Chill the Dough (Optional but Recommended):
Chill dough in the refrigerator for 20–30 minutes for thicker cookies. - Bake:
Preheat oven to 350°F (175°C). Scoop tablespoon-sized balls onto a baking sheet lined with parchment paper. Bake for 10–12 minutes, or until edges are golden but centers are still soft. - Cool & Enjoy:
Let cookies cool on the tray for 5 minutes before transferring to a wire rack. Enjoy warm or store in an airtight container for up to 5 days!
