Instructions
- Cook the Bacon or Ham Hock
In a large pot over medium heat, cook the bacon until crisp. Remove and set aside, leaving the drippings. If using a ham hock or smoked turkey leg, brown it in a bit of oil to render flavor. - Sauté Onion and Garlic
Add the onion to the pot and cook until softened (about 5 minutes). Stir in the garlic and cook for another minute until fragrant. - Add Broth and Seasonings
Pour in the chicken broth, and stir in the vinegar, salt, pepper, sugar, and red pepper flakes. Add the bacon or return the ham hock/turkey leg to the pot. - Add the Collard Greens
