  • 1 can cream of mushroom soup (10.5 oz)
  • ½ cup milk
  • Salt and pepper, to taste
  • Optional: garlic powder or paprika for extra flavor

Instructions

  1. Preheat Oven:
Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the Beef:
In a large skillet over medium heat, cook the ground beef with chopped onion until fully browned. Drain excess fat and season with salt, pepper, and optional spices.
  3. Prepare the Casserole Mixture:
In a mixing bowl, combine cream of mushroom soup with milk until smooth.
  4. Assemble the Casserole:
Layer half of the thinly sliced potatoes at the bottom of the prepared baking dish. Spread half of the cooked beef and onions over the potatoes. Pour half of the soup mixture over the beef, then sprinkle 1 cup of shredded cheddar cheese. Repeat with remaining potatoes, beef, soup mixture, and top with remaining cheese.
  5. Bake:
Cover with foil and bake for 45 minutes. Remove foil and bake an additional 15-20 minutes, until the potatoes are tender and the cheese is bubbly and golden.
  6. Serve:
Let the casserole cool for 5 minutes before serving. Enjoy this hearty, cheesy meal with a side salad or steamed vegetables.

  • Swap cream of mushroom soup with cream of chicken soup for a lighter flavor.
  • Add chopped bell peppers or mushrooms for extra veggies.
  • Make it a make-ahead dinner by assembling the casserole the night before and baking it the next day.
